		<description>I&#039;ve pickled a lot of things, and often thought about jicama but never went for it.  After reading this recipe, I had great success!  I don&#039;t have a mandoline, but I went for french-fry (as in, fast food type) shapes sticks that pickled just fine.  I served these in a salad with a separate pickle mix made from  mango, cabbage, onions, and garam masala in vinegar--it was great.</description>
