Happy Thanksgiving, Breakaway Cooks!
November 26th, 2008 Posted in Cooking ideasDelia and I woke up to this beast, and about 20 of her pals, the other morning when we were camping up in Lake County. I had always thought that wild turkeys were exceedingly skittish, but these guys were poking around practically inside the tent!
May you all have a very special day (and meal) tomorrow; if anyone feels like sharing any breakaway dishes you’ve made, please do! I’m thinking of butterflying the 10-pounder I bought yesterday, and giving it an Indian spice treatment.
I’m thankful for everyone reading this, and simply for being alive in this time, in this place. Peace and good wishes to everyone!

Happy Thanksgiving to y’all.
I’m going to be smoking two butterflied organic turkeys over wood from our fruit trees. I butterflied them last night, and have been brining them in cardamom, cumin, garlic, and a few drops of hotsauce. Tonight they get a tandoori spice rub. I expect to smoke them tomorrow for 6-10 hours.
We also made a chipotle cranberry relish.

We decided to “break away” from turkey altogether and will be grilling Prather Ranch ribeyes rubbed with red and white schzechuan peppercorns for our Thanksgiving feast.
