I&#039;m going to be smoking two butterflied organic turkeys over wood from our fruit trees. I butterflied them last night, and have been brining them in cardamom, cumin, garlic, and a few drops of hotsauce. Tonight they get a tandoori spice rub. I expect to smoke them tomorrow for 6-10 hours.

We also made a chipotle cranberry relish.</description>
