Sounds wonderful. I like canellini beans with sauted vegetables. Easy to have beans on hand-no soaking-cook in crock pot-portion into freezer containers.

Stacked lunch sounds superb.

Faux pa jun (Korean pancake), faux okonomiyaki (Japanese pancake) are great reasons to keep lots of veggies around.

Sometimes it's all just an excuse for me to chop up habaneros and eat them.

I have been very fortunate to have some friends who grow fresh fruits and veggies in their backyard since I have no place to grow anything... Also recently I found a great produce market not too far from where I live and I've been buying a box full of fresh produce every other week. I do the same thing like you said, I always try to keep some vegetables at home so that I will not forget to eat them. Of course, having good quality vegetable is a plus!

Eric, it seemed like the CSA farmer you recommended to me stopped coming to my town... :(
So, I'm actually looking into another place right now.

My strategy is to cook more greens than we'll eat at dinner so I have leftovers for a veggie frittata or pa jun. Right now I have a container of leftover cabbage with Indian spices that will go into a faux okonomiyaki. I love that just about every culture has a veggie pancake dish.

Today Robert sauted onion, zucchini, and red peppers. Meanwhile I chopped up a giant tomato, dressed it, and heated leftover beans.
I stacked my beans on the bottom, zukes in the middle, and tomato on top. Quick salad of lettuce, watercress, and basil. Great lunch, especially with a little bit of sweet thing for dessert. We don't always eat this well! We agreed that summer is great.
